Influence of Pre-Treatments on Some Nutritional and Anti-Nutritional Contents of Solanum macrocarpon (Gbagba)

Abstract
This study assessed the effects of boiling and squeeze-washing on the mineral and anti-nutritional contents of Solanum Macrocarpon (Gbagba) leaves. The leaves were cleaned; squeeze washed or boiled with or without salt for 5 minutes and sundried. The leaves were milled and analyzed for Ca, K, Cu, Fe, Mg, Mn, P, Zn, total phenol, tannin and oxalate using standard methods. Results showed the average mineral content of unprocessed Solanum macrocarpon as calcium 1704 mg/100g, potassium 2289 mg/100g, copper 4.68 mg/100g, iron 9.26mg/100g, magnesium 637.06 mg/100g, manganese 8.51 mg/100g, phosphorus 275.88 mg/100g, zinc 5.36 mg/100g and 13.07 mg/g of total phenol, 6.39 mg/g, tannin and 1.8% oxalate. Greatest anti-nutrient losses were found in samples boiled or squeeze washed with salt having a percentage reduction of 49.14 - 54.46%, 43.61 - 60.67and 31.67 - 58.34% for tannin, total phenol and oxalates respectively. Concentration of the minerals studied showed reduction of 6.78 - 46.35% and 4.53 - 41.20% for the samples boiled or squeeze washed with or without salt. Calcium content increased by 13.64 to 19.25% in boiled samples but decreased by 3.9 - 12.08% in squeeze washed samples. Pretreated leaves still contained sufficient nutrients to meet the recommended mineral daily allowance.
