Abstract
Aspergillus is a mold that is often found to contaminate food. Therefore, it is necessary to prevent the contamination of mold by referring to food grade standard. The use of chitosan biomaterials is one of the alternatives that can be used to overcome the problem of kapang because it has antimicrobial activity. This study aims to analyze the the antifungal activity of chitosan to inhibition on the growth of Aspergillus and determine the effective concentration of chitosan on inhibition the Aspergilluss growth. Antifungal activity test to be used solid dilution method. Concentration of chitosan used was 0; 0.5; 1; 1.5; and 2% (w/v). Observation was conducted after incubation for 7 days at room temperature. The parameters observed was the inhibition Aspergillus growth with indicated size of the diameter mycelial colony. The results showed that the chitosa had an inhibitory effect on mycelial colony Aspergillus growth. The higher concentration of chitosan gave the smaller average diameter mycelial colonies and the greater percentage of the inhibition potency. The treatment of chitosan with a concentration of 1.5% can inhibit more than 50% growth of A. flavus, A. fumigatus, A. ochraceus, and A. niger.
